Ingredients
To cook the green mole with ground nugget and chicken you need the following:
- 500 grams of sesame
- 200 grams of green seeds
- 8 pieces of chicken breast, leg or thigh
- 12 poblano peppers
- 24 green tomatoes
- 2 lettuce leaves
- 8 cuaresmeño peppers
- 4 serrano peppers
- 1/2 bunch of parsley
- 1/2 bunch of mint
- Salt and pepper to taste
- 100 grams of peanut
- 8 cinnamon sticks
- 2 cloves
- 1 teaspoon cumin
- 4 cups of oil or 3 tablespoons of butter
- 100 grams of almond
- Water or chicken broth
Step by step to cook green mole with chicken and ground nugget
Although the green mole recipe requires many ingredients, its procedure is very simple.
Step1
Boil the chicken pieces with or without skin and with onion and salt.
Step 2
Remove the shell of the peanuts, almonds, and seeds.
Step 3
Fry the ingredients from step 1 in a pan and reserve.
Step 4
Blend the parsley and mint with the tomatoes and Cuaresmeño, serrano, and poblano peppers without seeds and without veins until obtaining a paste. Reserve.
Step 5
Blend the peanuts, pumpkin seeds, and almonds together with the sesame, pepper, cinnamon, cumin, and cloves. Reserve.
Step 6
In a clay pot, preferably, add oil, let it heat up and add the pasta from step 3.
Step 7
Integrate the species and with the support of a wooden spoon move until all the ingredients are mixed.

Add the necessary water or chicken broth.

You can change the chicken for turkey and cook it with butter instead of oil. If you don’t have a clay pot, any other will work, just the hot food won’t keep for long and won’t taste the same thanks to the clay.
