Apple strudel or apfelstrudel is a dessert originating from Vienna, Austria. Its history dates to the Habsburg dynasty and as a recipe, it first appeared in 1696 in the “Koch Puech” manuscript.
The filling is usually yellow apples with cinnamon and raisins, although some omit this last ingredient.
Although puff pastry can be bought in the bakery area of a supermarket, this time we share the steps to make it from scratch.

Apple strudel with puff pastry
Ingredients
For the puff pastry
- Get that strong-arm ready because you need to do several easy folds and turns.
- 1 cup of water
- ½ kilo of margarine at room temperature
- 1 kilo of all-purpose flour
- 1 cup of water
- 1 pinch of salt
- 1 pinch of sugar
- 125 grams of melted margarine
For the filling
- 6 yellow apples
- 1 egg
- 1 tablespoon of water
- 50 grams of walnut
- 50 grams of raisins
- Cinnamon to taste
- 1 tablespoon of rum
- 1 spoon of vanilla
- 1 tablespoon lemon juice
- 50 grams of icing sugar
Step by step to cook apple strudel
Step 1
On a flat, clean table or surface, place the melted margarine together with the sifted flour, salt, and sugar and mix until smooth. Rest in a bowl for 30 minutes.
Step 2
With a rolling pin and on a floured surface, flatten the block of butter until you get a square 5 millimeters thick, and on the extended dough from step 1, place it on the edge, flatten it again and cover it by making a fold to the right, as if You were going to close a book.
Step 3
Refrigerate for 30 minutes in a bowl covered with non-stick plastic.
Step 4
Repeat step 2 for three more times and insert the fold to the left and then to the right.
Step 5
Cut the puff pastry to the size of your mold to bake it for 10 minutes at 180 degrees Celsius. Before putting it in the oven, prick the dough with a fork and place beans or uncooked rice on top so that the dough does not inflate.
Step 6
Peel and cut the apples into small squares.
Step 7
Sprinkle them with rum, vanilla, pecans, raisins, cinnamon, and lemon juice.
Step 8
Remove the dough from the oven and place the ingredients from steps 6 and 7 on top.
Step 9
Cover with puff pastry and make fine lines without reaching the filling.
Step 10
Bake for 30 minutes at 180 degrees Celsius.
Step 11
Serve and decorate with icing sugar.
Gastronomic tip
Do not use gloves when making the volcano, a clean hand without painted nails will always be more hygienic for handling food. If you have a little puff pastry left over, wrap it with plastic wrap and keep it in the refrigerator, not in the freezer, for a mille-feuille or empanadas filled with your favorite ingredient.
