Eggs Benedict are an ideal option when you want to make a quick and light breakfast.

Eggs Benedict is an Anglo-Saxon dish usually made with cooked ham, pastrami, or pancetta, hollandaise sauce, and poached eggs on two English muffin halves.

Gastronomy experts point out that its origin dates to 1945 when Lemuel Benedict asked for a hangover remedy, and this recipe was the solution to his discomfort. Some variants include salmon instead of egg. How do you like more?

Easy and simple recipe for eggs benedict

Ingredients

To cook the Benedictine eggs, you need the following:

  • 4 poached eggs
  • 125 grams of melted butter
  • 3 lemons
  • 1 pinch of salt
  • 4 bagels or golden English muffins
  • 2 slices of fried bacon
  • ½ liter of water
  • Pepper
  • 1 bunch of spinach
  • Hollandaisese sauce
  • 2 tablespoons white wine vinegar
  • ½ tablespoon fresh or dried tarragon leaves
  • chives
  • Paprika

Step by step to prepare and cook eggs Benedict

Step 1

For the hollandaise sauce in a saucepan place vinegar, tarragon, pepper, and water. Let half of the water evaporate, strain, and let cool. 

Step 2

Join the yolks with the mixture from the previous step; boil in a bain-marie and with a balloon whisk beat until thick. Add the melted butter while beating. 

Step 3

Season and add a few drops of lemon. If necessary, adjust the consistency with water. Reserve.

Step 4

Boil water with drops of lemon, vinegar, and salt, and in the first boil pour off two eggs. Let boil for 5 minutes. Lean on a spoon so that the egg white covers the yolk. 

Step 5

Remove the egg and put it in warm water. Repeat the same step with the other two eggs. 

Step 6

Cut the bagel or English muffin in two and place the egg on top. Accompany with spinach, fried bacon, and hollandaise sauce.

Step 7

Sprinkle with chives and paprika.

Hollandaise sauce can be used to give a touch of gratin to fish, shellfish, or asparagus. If it is very solid, add a teaspoon of hot water and use the blender to lighten it.
