An easy and simple recipe for tiramisu with cookies and coffee

Ingredients

For the cookies

  • 10 eggs
  • 450 grams of flour
  • 250 grams of refined sugar
  • 1 tablespoon vanilla

Cheese filling 

  • 600 grams of mascarpone cheese
  • 250 milliliters cold Ambiante whipping cream
  • 1 tablespoon vanilla
  • 1 lemon
  • 50 to 100 grams of icing sugar

Syrup

  • 100 grams of sugar
  • 1/4 water
  • 100 milliliters of coffee liqueur or amaretto
  • 1 cinnamon stick
  • 2 American coffee espressos

Decor

  • 100 grams of grated white chocolate
  • Cherries in syrup
  • 150 grams of cocoa powder
  • 5 grams of ground cinnamon
  • 50 grams of icing sugar

Tiramisu step by step

For the cookies

Step 1

Preheat the oven to 180 degrees Celsius. 

Step 2

Separate the whites from the yolks. Beat the whites to the point of nougat and add the sifted sugar little by little and in the form of rain until it forms a meringue. They will be ready when they don’t fall out of the bowl. 

Step 3

Temper the yolks with vanilla and mix with a spoon. Join both mixtures, but before tempera add a little meringue to the yolks. Bat in an enveloping way. 

Step 4

Add the sifted flour and beat with a spatula. Put the mixture in a pastry bag.

Step 5

On a tray prepared with star paper, form the 8×3 cookies and bake at 180 degrees Celsius for 15 minutes or until necessary. 

Cheese filling

Step 1

Cream the cheese with the blender and gradually add the lemon juice, the vanilla, and the sugar. 

Step 2

Beat the whipping cream, it should be with firm peaks.

Step 3

Combine both mixtures. 

Syrup

Step 1

In well heat water with sugar, cinnamon, and coffee. After 1 minute remove from the heat and add the liquor and stir.

Decoration and assembly

Step 1

Place a base of cookies soaked in the syrup and place a layer of filling. Repeat until you finish with a layer of cream. Sprinkle with mixed cinnamon powder, cocoa, and icing sugar, and decorate with cherries and grated white chocolate.
